The hefty volume put together by the Texas Folklore Society contains factual information, more than 120 recipes, and stories that illuminate life in Texas in different time periods and regions.<\/p>\n<p id=\"u57022-26\">\u201cEssential to life is food. Central to folklore is the acquisition, preparation, and rituals of food. Culinary history tells the lore of the community and the people,\u201d writes <span>Phyllis Bridges,<\/span> a professor of English at Texas Woman\u2019s University, on page 229.<\/p>\n<p id=\"u57022-29\">The book is divided into ten sections representing different vegetation regions of Texas. The introduction to each section gives information about the rainfall, flora, and fauna of each region, since they influence the culinary traditions which developed in that area.<\/p>\n<p id=\"u57022-32\">Reading the book you learn about what old cowboys \u2014 like Bill Binz, who had a way with horses and mules \u2014 liked to cook; how women made food stretch during the Great Depression; and the family life of a transient migrant worker. You\u2019ll learn about canning customs and the different methods for killing chicken.<\/p>\n<p id=\"u57022-35\">You get culinary sneak peeks into Czech, Norse, and Cajun kitchens. And discover recipes with intriguing titles like Vinegar Pie, Bear meat and marinade, Boiled and Pickled Cow\u2019s Tongue.<\/p>\n<p id=\"u57022-37\">Within the pages you\u2019ll find recipes shared and enjoyed by famous Texans \u2014 treasures like Senator Kay Bailey Hutchinson\u2019s Family Cake, Sam Houston\u2019s Famous Barbecue Sauce, Ma Ferguson\u2019s Pecan Cream Pie (she was the first female governor of Texas).<\/p>\n<p id=\"u57022-48\">You\u2019ll also find stories and recipes from many of the state\u2019s literati: legendary folklorist and author <span>J.
