archive<\/span><\/a><\/span><span id=\"u92028-77\">Cookbook features variety of Texas favorites<\/span><\/h1>\n<p id=\"u92028-82\"><span>Home cooking, says fourth-generation Texas author Jessica Dupuy,<\/span> \u201cis the language of our family.\u201d<\/p>\n<p id=\"u92028-85\">\u201cEvery weekend gathering or holiday get-together,\u201d she recalls, \u201crevolved around one conversation: What are we eating, and who is bringing what?\u201d<\/p>\n<p id=\"u92028-88\"><span id=\"u92047\"><a href=\"http:\/\/www.amazon.com\/United-Tastes-Texas-Authentic-Recipes\/dp\/0848745809\" id=\"u92048\" target=\"_blank\" class=\"readableLinkWithLargeImage\" rel=\"noopener\"><\/p>\n<div class=\"readableLargeImageContainer float\"><img decoding=\"async\"   src=\"https:\/\/lonestarliterary.etypegoogle10.com\/sites\/lonestarliterary.etypegoogle10.com\/files\/description\/dupuy%2c%20united%20tastes%20of%20texas_cover%20sm219x251.jpg\"  id=\"u92048_img\" \/><\/div>\n<p><\/a><\/span><\/p>\n<p id=\"u92028-94\">Dupuy is the author of a wonderful new full-color and reasonably-priced Texas cookbook, <span><a href=\"http:\/\/www.amazon.com\/United-Tastes-Texas-Authentic-Recipes\/dp\/0848745809\" target=\"_blank\" rel=\"noopener\"><span>United Tastes of Texas: Authentic Recipes from All Corners of the Lone Star State<\/span><\/a><\/span> (Oxmoor House, $24.95 hardcover, under the auspices of Southern Living).<\/p>\n<p id=\"u92028-97\">In the book\u2019s 272 pages, Dupuy includes about 140 Texas recipes, grouped by five major sections of the state \u2014 Central Texas, East Texas, Coastal Texas, South Texas, and West Texas \u2014 with a section also devoted to what she calls \u201cTexas shindigs\u201d or parties or special occasions.<\/p>\n<p id=\"u92028-120\">The author also includes two-page profiles of ten noted Texas chefs \u2014 <span>Tim Byers<\/span> (Dallas), <span>Jack Gilmore <\/span>(Austin), <span>Jesse Griffiths<\/span> (Austin), <span>Melissa Guerra<\/span> (San Antonio), <span>Johnny Hernandez<\/span> (San Antonio), <span>Lou Lambert<\/span> (Austin and Fort Worth), <span>Tom Perini<\/span> (Buffalo Gap), <span>Stephan Pyles<\/span> (Dallas), <span>Chris Shepherd<\/span> (Houston), and <span>Andrew Wiseheart<\/span> (Austin, originally from San Angelo).<\/p>\n<p id=\"u92028-123\">The book focuses on the rich variety of Texas flavors prominent in the different parts of Texas,\u00a0 with short sidebars on Texas food trivia and lists of a half dozen or so recommended restaurants or \u201cpit stops\u201d in each region.<\/p>\n<p id=\"u92028-126\">Here are a few of the recipes offered from the different regions:<\/p>\n<ul id=\"u92028-137\">\n<li id=\"u92028-128\">Central Texas: potato salad, chicken corn chowder, smoked brisket, baby back ribs, cream cheese kolaches, beer bread, sheet cake.<\/li>\n<li id=\"u92028-130\">East Texas: black-eyed peas, garlic mashed potatoes, meat loaf, rump roast, chicken fried steak, chicken and dumplings, fried chicken, fried fish, hush puppies, banana pudding, pecan pie.<\/li>\n<li id=\"u92028-132\">Coastal Texas: fish tacos, grilled redfish, shrimp creole, jambalaya, shrimp and okra gumbo, tequila lime pie.<\/li>\n<li id=\"u92028-134\">South Texas: guacamole, several different salsas, migas, chilaquiles, King Ranch chicken, enchiladas, puffy tacos, fajitas, pralines, flan, cinnamon ice cream.<\/li>\n<li id=\"u92028-136\">West Texas: Texas caviar, huevos rancheros, frontier breakfast tacos, West Texas chili, Frito pie, Perini prime rib, Texas burgers, grilled rib-eyes, Mexican wedding cookies.<\/li>\n<\/ul>\n<p id=\"u92028-140\">Throw in color photographs with most of these recipes, and you can work up a powerful hunger for Texas cooking just thumbing through the book.<\/p>\n<p id=\"u92028-143\">\u201cTo understand Texas food,\u201d Dupuy writes, \u201cis to understand its regional diversity.\u201d Certainly there are plenty of great flavors emanating from each section of the state and culminating in what we have come to appreciate as Texas cuisine.<\/p>\n<p id=\"u92028-146\">* * * * *<\/p>\n<p id=\"u92028-156\"><span id=\"u92028-147\">Glenn Dromgoole<\/span> is co-author, with Carlton Stowers, of <span><a href=\"http:\/\/www.bible.acu.edu\/acupress\/pg.asp?ID=132\" target=\"_blank\" rel=\"noopener\"><span id=\"u92028-149\">101 Essential Texas Books<\/span><\/a><\/span> Contact him at g.dromgoole@suddenlink.net.<\/p>\n<h1 id=\"u92028-161\"><span>&gt;&gt;
